Both PitStop Pro and hand hacking on my part agree that there is a
profile there. Does anyone know what the problem is ?
Illustrator CS ignores them, for whatever reason, in all PDF files I've
generated from Mac OS X. Pitstop Pro, Acrobat 6 and 7 all see the
profile. Illustrator CS might see them or be capable of seeing them,
but ignores them in favor of its RGB Working Space. Illustrator
documents are one mode with one color space. PDF's can contain mixed
mode objects each other their own profile. For Illustrator to handle
such PDF's correctly, it would need to normalize the PDF, converting
all objects to the Working Space for the mode you asked Illustrator to
use when opening the PDF (either RGB or CMYK). From what I can tell, it
doesn't do that.
