I just tried this myself in CS2 and cannot duplicate your findings. I set up the values in the Lab fields of the color picker, and then filled a new 8-bit Lab document with the foreground color, using identical vaues as used in your test. But in my case, the info palette shows the same values. No time right now to check out variants in color prefs, 8-bit vs. 16-bit, etc.
