I did go to RIT (BFA in Commercial Photography 1989) and I AM going to RIT (current student for MS Color Science, I'm in the second year). I still think black is the way to go. You would never use a white studio for copy work. As someone who has done a fair amount of catalog work, I will "weigh in on this." Black is best (and copy work does not necessarily have the same demands as catalog work anyhow). Neutral gray walls are not necessary for evaluating the image on the monitor, as the room will be fairly dark anyhow. Black is the best way to go for reproducing artwork.
At the Munsell Color Science Lab we have a spectral lab specifically for doing research in digital (spectral) image capture of artwork. The studio has black walls. I've also worked in a commercial photo lab that did digital copy work and digital/film studio work. Both studios had black walls, not gray.
My guess is that in reproducing artwork, the need for a neutral environment for accurately evaluating whether of not the digital image is a match to the original would far outweigh the need to avoid stay light.
I think that's a bad guess. Controlling the light should be the main concern at the stage of image capture (which is the purpose of the copy room).
I'm not trying to be rude, so I apologize if it comes off that way. I just don't agree with the advice you are giving, so I'm offering another view point.
