It doesn't have to be. XYZ can be converted to/from CIELab without loss of any relevant information, and Lab has considerable advantages for things like table interpolation.

You're mixing different things up. CIELab is not the perfect perceptual space, and it's correct to say that it has some noticeable distortions in some areas, but, it's far, far more perceptually uniform than XYZ !
