>From what I understand, it would make sense that the values used in WCS
would be XYZ, which then could be made to undergo a chromatic adaptation
according to the chosen illuminant in each particular situation.

By the way, here comes my turn for "stupid question time": why can't ICC
profiles work from XYZ values instead of CIELAB, as they do now?
