Hi Gordon,
It is my understanding that when you select "Custom CMYK" you are no
longer using the profile that was previously selected. You have moved
back to the Photoshop original separation engine. You are making full
manual selections that have nothing to do with the original profile you
selected. Try selecting the "U.S. sheetfed Coated v2" profile. Then
select the "Custom CMYK" selection. You will notice that the default
ink colors are "SWOP (Coated)". You have just switched to the old
separation engine.
As far as I know, Photoshop cannot modify or edit profiles. Many
people have asked for this feature.

The Adobe v2 profiles use a GCR-type black generation.
