I think the short answer is that it's a waste of money...unless you care about playing first person shooter games at dizzying speeds. Photoshop isn't about how many shaded polygons can be rendered in a millisecond! If you were doing a lot of real-time video then the graphics card makes a big difference. Core Graphics in OS X.4 passes many tasks off to the video card, but I'm pretty sure Photoshop isn't going to benefit from a card with 512 MB of VRAM as opposed to 256. 

Spend the money on ink or paper instead...
