I'm having trouble understanding the color management in Aperture. When I export an image, using the “Use Source Profile” setting in the Export Preset settings, the image is tagged with Adobe RGB. Is there a way to change this? It's the same when I use the “Open with External Editor” command.

Yes - choose a different export profile!

If your original had a profile then it will be honoured.

If it was RAW then it'll use a default unless you stipulate what you want it to do.
