they sent me, which I used to make the CMYK conversion, send this CMYK file along with a
proof, which I made by ripping my original RGB file through a press simulation also using
their profile.
The screen to proof correspondence was very good, and the test prints that came back were also very close.

In my opinion, you did the right thing. If you give the printer a CMYK file with a hard copy proof, and their test prints matched closely to the proof, I don't see why there is even a question. The AD's suggestions sound suspect to me anyhow, but I won't go into all that in detail.
