Steve, you are as ever both wise and helpful - I've updated my
GIMP-Print to one that supports my Epson 2400, (easy to do from here
http://mac.softpedia.com/get/Drivers/Gutenprint.shtml) and now will
start to play around with it - hope to have more news in a day or so.
There are zillions of options in CUPS, and I need to get used t this.

unless you need Postscript you don't need Gutenprint.
Create a new printer using the GIMP-Print driver and then go into CUPS by entering http://localhost:631 into Safari. Then check out all the options and note that you can setup the printer for CMYK output.
Then print a test CMYK print from Photoshop with a K-only ramp and see if it is clean. It's been a while since I did this so you might also so need to create an additional printer that prints to the first printer's queue. If you create it with the postscript driver then you can ensure you have CMYK access to it.
Yes, this means you can print Postscript and CMYK to a desktop printer without a RIP. We have one of these set up in our office and we print to it across the network using postscript drivers (!) NO RIP. Tiger has a built-in PS->PDF convertor that handles the conversion on the fly. It works quite well for us...
