Hi David.
In Illustrator CS2, go to the Swatches palette, click on the palette menu (the little triangle on the upper right-hand corner of the Swatches palette), then select "Spot Colors..."; in all likelihood, you will find that the option currently selected is "Use CMYK values from the manufacturer's process book." Instead, you ought to select the radio button next to the other option, "Use Lab values specified by the book manufacturer."
Click the OK button, and the appearance of your spot color will change, probably far closer to what you see in Photoshop.
