The info I received from this list was very helpful and the solution to my problem was very simple. In Illustrator CS2 if one selects "Use Lab values specified by the book manufacturer" for Spot Colors, PMS colors will now match between Photoshop and Illustrator. Photoshop defaults to LAB values, Illustrator defaults to a CMYK build. Once Illustrator uses the built in Lab PMS numbers then all is fine. My print was match to the PMS spot color with no further adjustments.
