I know this may be obvious but I have to ask.

I'm a photographer and at this moment I'm sending my photos (PSD, 8
bits, CMYK North America Prepress2) to a Design Center, wich will
place them into Indesign and send to an Offset.

They asked me what Colour Management Policy they have to assume with
my cmyk photos, "Preserve Embedded profile" or "Preserve numbers" ?

"North America Prepress 2" assumes "preserve numbers" as default but
I guess this changes everything.

What do YOU recomend in this case?

First, all of your photos should have an embedded profile.

Second, have they told you what color space they're working in?

To me this seems an odd question - like maybe they're trying to get your permission to repurpose the images.
