Isn't it a matter of how the PostScript target is create ? If the target is in device space (device CMYK), and you set UseCIEColor in the page parameter dictionary to false, then it should go straight through. Fiery seemed to use a pretty straight Adobe approach to color handling, so they are probably setting UseCIEColor, and diverting device CMYK through the PostScript CSD/CRD machinery by default.
