As you wrote, you have a straight line as you increase the tonal values.
If you measure the patches in Lab and convert the numbers to LCh, you
will have the hue angle as a reference.
The point when the paper gets overinked is simply the point when the
hue angle starts to drift away from the reference straight line for a
defined
amount. Which amount, you have to find out or define for yourself.

EFI ColorProof has a very interesting ink limit feature that I'd like
to know more about. After setting the total ink limit, EFI does an
individual ink limit where we print out Cyan, Magenta, Yellow & Black
linerization wedges. When we read them in, there is an advanced
feature that shows where the individual wedges plot on a typical color
gamut (I assume L:50). I like that I can see where the individual inks
stray from a straight line as I believe this shows where the inks are
becoming overinked and therefore unpredictable.
Does anyone know what method is being used by the RIP because I'd like
to use this to determine my own individual ink limits on other RIPs.
I'd be happy to manually crunch numbers if I can get a visual graph
similar to the EFI ColorProof method.
