It seems to me that scanning in to the Wide Gamut or the Wide Gamut
(converted) would be better than using any of the other spaces because I'll
be converting my scans into the Holmes Ektaspace when I open them in
Photoshop. Converting from a large gamut (Nikon Wide Gamut) to a smaller
one (Holmes Ektaspace) seems a better choice than converting from the
smaller gamut Adobe 1998 to the larger gamut Ektaspace.

You should not use any intermediate colour space that not fully encompasses your target colour space. And stick to colorimetric.
