The process you describe is called "printing".
The operaters call themselves printers.

G7 is a methodology isn't it?
A spectrophotometer is used to measure color.
A densitometer is used to measure densities -> ink film thickness
measurement. (has other functions build in as well)
The eyeballs are used for comparing color and more.
Human vision is the most important element in the evaluation of the printing
process.
At a press check, the customer judges with his/her own eyes, wathever
methodology used...
Measuring instruments are used for process control.
In controlling color, the most important parameter a printer can adjust is
inkfilm thickness in the different inkzones of the printing units.
Densitometers are build for this purpose.
In fact, todays Spectrodensitometers integrate "colorimetric" and
"densitometric" measurements so your bet is ... well ... sucks. (:-))
