Press crews have traditionally aimed at solid densities and gain values at various parts of the tone scale. A fancy way of saying this would be, "they set up the machine to match a set of characterization data that are independent of any subjective aim point". The press crew is thereby defining the gamut's size and shape.
G7 is just a different method. By either method, the press arrives. If it arrives at the same place by either method, then which is better?
But solid density and gain value measurement do not necessarily bring the gamut size and shape that is being defined into conformity with a specific target colourspace. They might if they had been correlated with spectral measurements at the time of press calibration/ adjustment. But if they haven't then the press is gonna supply a different colourspace and when that is assigned to the colour numbers supplied, colour appearance will change... Back to the same old story, "this must be correct, I have white paper going in and coloured paper coming out, it is happening before my eyes it must be right"...
We would not and do not accept that premise if we were talking about monitor calibration/profiling or proofer calibration/profiling and as sure as eggs are eggs, we should not above all accept that on a printing press.
After all in the majority of cases everything we do prior to printing is preparation and prediction of what is required to successfully mass (re) produce a concept, arguably the most important device to get right is the mass production device.
Call it what you like, Calibration, adjustment, JuJu, blackmagic... just use it!
