Indeed, 8 bit profiles won't get you far on the scene-referred data
which is why they should probably be retained only for looks. But the
philosophy of having third party tools that can compute profiles, of
having measurement instruments etc, all of that can be saved by
adapting the notion of profile to the more demanding environment of
capture data.
Closer to the state of the art, you measure the spectral response of
your sensor sample and lens or take the prototypes from the canned
specs. You measure or assume a spectral power distribution for the
scene illuminant. You then derive the raw2xyz transform. Then you
allow the photographer to reduce his image to output-referred form by
using sliders to carve out the pieces of the recorded gamut which
interest him, while previewing the image via a "look profile". It's
not rocket science, just technology as all of us here know well....
