Hi Danny,
Short answer for sheetfed on Type 1/2 paper: Fogra39 or Gracol 2006/7.
Both profiles are derived from the same press data and you would struggle to
see the difference.
Key to the process is using either of these profiles as your default cmyk
colour space for the applications.
