For prepress, Adobe RGB (1998) is tolerable but not preferable. I'd
prefer to see ColorMatch RGB than Adobe RGB (1998). As a compromise
ECI-RGB v1.0 would maybe be better as an across the board prepress
choice. I am decidedly not a fan of ECI-RGB v2.0.
For CMYK, I think people just need to educate themselves, and if they
don't or won't or can't, then they will just get generic results with
US Web Coated (SWOP) v2. If they know better, they'd use
SWOP2006_Coated3 as a decent compromise for unknown destinations.
