Hadn't heard of it before, but a quick Google search turns up this paper:
http://www.cis.rit.edu/people/faculty/berns/PDFs/Europto_Berns.pdf
It's focused at art reproduction. If I can summarize it appropriately, they photograph artwork through various filters and do some mathematical jiujitsu to come up with a file that would be the equivalent of having photographed the art with a camera whose photosites are spectrometers.
They then print that on a printer which essentially mixes inks the same way that the local hardware store mixes paints.
Sounds fantastic. I won't hold my breath in expectation of Canon or HP or Epson selling such a printer anytime soon, but I imagine I'll want to be saving up some pennies so I'll be able to get one when they finally do.
Thanks for the insight!
Cheers,
