Basic problem with G7 stochastic and just using plate/press curves is that you will NEVER get it to match a G7 GRACoL or SWOP proof even if you're hitting the G7 Hc/Hr/Sc target values for tone and gray balance. With stochastic you get a lot of "extra" color gamut through the 1/4 and midtones making it impossible to match a proof made using the GRACoL/SWOP characterization data set.
Only way to get "G7" stochastic to work with a GRACoL/SWOP proof is to use device link profiles or to resort to profiling the press and use that custom profile in proofing in my experience.
