The step you're missing is CONVERTING from your (assigned) scanner profile to the "output" space of your choice...."output" meaning to a web browser via sRGB or to a printer profile.
The profile conversion process is what will maintain (more or less) the same visual appearance of the original image as you move/convert it from one color space to another.
A note on workflow....some would suggest that soon after assigning your customer scanner profile that it should be moved to an "editing" space/profile (working space profile in Adobe's terms) for further work and then on to the final output space once image editing is complete. There are several working space profile options, most notably ProPhotRGB, AdobeRGB and sRGB. There are pros/cons to each choice but I would suggest you choose a space that's at least as "large" as your scanner profile and perhaps even a bit larger to avoid color loss or "clipping" from your original scan.
