I'm afraid that I can't address the root problem you are dealing with but I can offer a bit more information.
My understanding is that the OS does not have "default" profiles but, rather, generates profiles for "new" displays on-the-fly. The OS uses DDC/EDID to get chromaticity information from the monitor's EPROM and then generates a simple profile from that information. HOW it generates the profile may change from OS version to OS version, I'm not sure.
This might be splitting hairs but it might make a difference.
In regards to the larger problem, I would think that the right people in Apple could help you with the problem (even if to only tell you the pitfalls). A politely worded email to our list mom John Gnaegy might net you the right person within Apple. (I wouldn't fling people @ John normally but color is a small world and sometimes you need to try multiple vectors to find the right group. Also my friend Howard Simpkins @ Sheridan College in Toronto deals with color and large numbers of Macs on a network, he might be able to help.
