There is a huge misunderstanding when it comes to what raw converters actually do.
Consistency is one of the main goals of any photographic process. Given the exposure is consistent (current digital photographers do not recognize it and preach ETTR, even at higher than base ISO; and the vast majority believe that ISO is a change in sensor sensitivity), raw converters perform a well-defined set of actions with no room for colour problems (except for bugs and misconceptions):
- they read and decode raw file
- they pre-process raw data (normalize, linearize, pre-sharpen, ...)
- they calculate / accept and apply white balance
- they demosaic raw data
Strictly speaking, colour transforms (and contrast adjustments) are not the part of raw conversion, but they are nearly inevitably present. Hence the sources of colour / contrast errors are two: white balance misconceptions and inadequate colour transforms (profiles, as we usually refer to them, sloppy / loose warding).
Now, the colour can be accurate only as much as the colour filters in front of the sensors (CFA) are allowing it. Some cameras are better in that respect; but some vendors for certain models being incapable of reaching popular resolution and low noise numbers by the sensor electronics resort to overly transparent colour filters that do not discriminate / separate colours well enough to allow more light falling onto the sensor. This stems from yet another misconception, wrong understanding and wrong application of Luther-Ives condition.
