Cameron,
You can use the Icon Composer tool (in /Developer/Applications), save
the file in the Resources dir of the bundle, and add the property:
<key>CFBundleIconFile</key>
<string>name_of_the_icon_file.icns</string>
in the Info.plist file.
As I mentioned to you earlier, you may have to log out/in again for OS X
to register the change (see tn 2043 at
<
http://developer.apple.com/technotes/tn/tn2013.html>).
