I see your point as well. I agree that a pref like you're talking about is good. You could also have different prefs for realtime and mixdown if you *wanted*.
My main point is that I think the ability for the plugin to determine if it's running in realtime or offline (mixdown) should be there. I can think of other places this might be useful. VST has support for this. I'm still not sure if this is something that the current AU API supports; anyone know?
