Thanks Bill, but I still seem to be missing it...
On the audio page there is a download for the Apple Loops SDK,
but the documentation included only explains how to use the Loop
Utility,
it does not give specification-level details on the AIFF extensions.
In particular the "Tagging and Naming Apple Loops" pdf describes
in very high-level terms how Soundtrack uses "AIFF Loop Format"
markers and tags, but there is no specification-level information about
how these are structured in the AIFF file; the remainder of the document
just talks about using the Loop Utility app to modify settings through
its
app UI.

Is the spec for the AIFF/AIFC format as currently implemented by
Apple apps publicly available (free or for a fee)?
I've seen this question posted before but haven't seen a
definitive answer or URL.
In looking at AIFF files provided with Soundtrack I'm seeing things
that aren't mentioned in either the old AIFC spec found online or in
the QuickTime / Sound Manager documentation - chunks like
'basc', 'trns', 'cate', and 'JUNK'. If these are
application-specific things
I'd expect them to be buried in an 'APPL' chunk, but they're not.
Thanks,
Chris
