We do have an intention of providing one of these classes at some point.

Failing that, is there an example project of an N,M AU anywhere?

We use AUBase as a starting point when we do these (for example AUMatrixReverb)



Finally, it seems that AU Lab can't be used to do multichannel plugin testing. Is this
correct?

At this time yes, though this is an area we are looking into

No matter what I try, it seems AU Lab will only let me create multiple outputs
in stereo pairs. There doesn't seem to be a way to create say, a 5- channel output
channel or bus.
