This is a problem with some applications not searching for virtual
sources (or destinations).
Please let those applications know about the problem.
If you want to use an app that does this, AULab provides a way..
Create an instrument and have a look at the MIDI tab (and MIDI devices
management pane) if you want to have something you can test against
