but the how iTunes write tag info into AIFF files ? Because i can open and edit tag info for AIFF files in itunes

Do you really mean AIFF? The only format that supports ID3 tags is MP3 (and CA can't generate MP3 files.)
AFAIK, there are no equivalent metadata tags for AIFF.
