I think it just stores the metadata in the iTunes Music Library database, not in the file.
Try removing the file from iTunes (but not deleting it), then adding it back, and see if it still has the metadata.

It's possible that there is a standard for putting metadata like this in AIFF files; but if so, it wouldn't be anything like ID3. And I doubt CA would have support for writing it, since it doesn't even support writing the standard metadata to AAC files.
