In my experience, iTunes adds a custom Chunk to AIFF which seems to have ID3 embedded. If you have an AIFF parser that allows access to non-standard data chunks, then you might be able to reverse-engineer this. I always assumed it was a standard ID3 tag embedded in an AIFF chunk, but there could easily be additional information in there along with the ID3 info.
Then again, I could be thinking of Logic, which also has a custom chunk that it adds. I really only see these chunks when archiving AIFF to FLAC, when I have to decide whether to preserve the non-standard chunks in the FLAC file, or just discard them.

Do you really mean AIFF? The only format that supports ID3 tags is MP3 (and CA can't generate MP3 files.) AFAIK, there are no equivalent metadata tags for AIFF.
