The no-brainer solution used to be the Griffin FireWave. This is now discontinued but you may still pick one up if you hunt around.
I now use a budget priced Hercules USB 5.1 Channel Audio Adapter and this seems to work just fine. This despite the fact that the supplied literature says that it doesn't work with OS X! In fact, what it means is that you can't play stereo audio through it to get a simulated 5.1 effect - however, if you're generating your own 5.1 audio or watching a Dolby surround DVD then it's fine .... Well, almost. Last time I checked Apple's DVD Player didn't support Dolby surround, but the free VLC player does.
