I use the Emagic EMI 2|6, which has 6 analog outputs as well as
coaxial digital I/O. This is permanently attached to my home theatre
as one option for USB audio connectivity. I discovered this
interface in 2001 when the Apple CoreAudio team used it to
demonstrate 6-channel surround during one of the audio sessions.
Unfortunately, Apple discontinued the hardware shortly after
absorbing Emagic, IIRC, RIP. You may be able to find one on the used
market - I did, and so I now have two of them, since it comes in
handy as a portable audio solution.
As far as I know, uncompressed 5.1 audio is the limit for USB Full
Speed, so you'd have to move to High Speed for 6.1 or more.
A quick scan of audioMIDI.com reveals that the Cakewalk UA-101 seems
to support 10 channels, 6 when running at 192 kHz. I have not tested
this model yet.

Previously I have used a Griffin FireWave but this is no longer an
option since MacBooks no longer have a firewire connector (and the
FireWave is no longer being made). Each time I do a web search I
can see a number of possible alternatives, but none of them will
admit to being Mac compatible.
