Its a drum sampler, it needs 8 x stereo outputs. 

The user needs to be able to route different samples to different stereo outputs, to allow assignment to different mixer tracks in logic.  The config needs to show up in logic etc as having 8 x stereo outputs, not 16 mono (or a surround format).

I would be very happy to avoid using them if it is possible.  It makes the render callback a bit of a mess, not to mention additionally inefficient as you end up needing additional memcpys.  however, this was the only way i found to declare 8 x stereo outputs to logic.  i tried using the channel layouts stuff, but not only could i not get it to work, there also is no matching type anyway.  (I tried setting number of channels to 16 and then in declaring the channel layouts as an array of 8 stereo types, but au val would not accept it).

Is there an easier way to do what I need without using multiple busses?


The thing you have to ask yourself first is: what is the user trying to achieve? Then you ask "how can my plugin help the user achieve this?"
 
So ... what is the user trying to achieve when they use your plugin with 16 channels of audio data flowing from it?
