iTunes should be keeping backups for you (they contain your settings)
as well as your music, ringtones, and apps. If so, TimeMachine does
keep backups. I know because I had to go into TimeMachine to restore
my settings from a previous backup to get all my Cydia apps back
(which had been backed up with AptBackup).
Your best bet though is to probably do a restore (I'd recommend to
3.0.1), and then have iTunes resync to add back in your apps,
ringtones, photos, contacts, and calendars. After doing a restore,
you can then decide if you want the carrier update or not.

spinning wheel. Mail before the update, no email after the update. I
don't know of any way to 'de-update' the phone. I wish there was a

I'm doing a slightly different experiment. I set the phone (3G) to
call forwarding to another mobile phone, but 3G connectivity is
otherwise intact. Mail, web, and GPS all function normally, and I've
stopped looking at the unending "connecting" message when getting
mail, because it appears to connect and get mail just fine in spite
of that. I'm now on my second day without recharging, the phone
hasn't been powered down, and I've still about 2/3 battery life
left. Based on this observation, it's the phone function that's
really pulling down the juice.
