Dave,

My experiences are that I was able to restore the iPhone 3G but not the GS series. If you need a good video clip to show you how check "downgrade from 3.1 to 3.0" on YouTube. Follow these instructions and it works perfectly. Also, if you need to carrier settings for MMS, I can forward them to you.

Your best bet though is to probably do a restore (I'd recommend to 3.0.1), and then have iTunes resync to add back in your apps, ringtones, photos, contacts, and calendars. After doing a restore, you can then decide if you want the carrier update or not.

I'm doing a slightly different experiment. I set the phone (3G) to call forwarding to another mobile phone, but 3G connectivity is otherwise intact. Mail, web, and GPS all function normally, and I've stopped looking at the unending "connecting" message when getting mail, because it appears to connect and get mail just fine in spite of that. I'm now on my second day without recharging, the phone hasn't been powered down, and I've still about 2/3 battery life left. Based on this observation, it's the phone function that's really pulling down the juice.
