It's actually pretty ingenious. STT is integrated into the keyboard, thus, anyplace that they keyboard pops up, you can do STT.

If you're looking for speech to text on iOS, download Dragon Dictation. It's probably the most impressive and most useful free app that I've seen. You can send dictated text directly to an SMS message, mail messages, the note pad, or even Facebook and Twitter (if you're into those things).
Beyond that, I can't say that I've had any experience with voice interaction on Android handsets. How extensive is their voice support?
