Yes, used to be you could toggle that - when I last looked in-tenant (MS365) it
was using winmail.dat - and all the clients (Outlook, Apple Mail, Thunderbird,
etc.) understood them. When I work with external users, it's like the only
spot I find the smime.p7m we all know and love...
Yes, this was unexpected. I thought that was old/deprecated/etc. Not so,
darn-it.

I dunno ... somehow I end up seeing a lot of winmail.dat files and I'm
DEFINITELY not using Exchange (I see a lot less than I used to, though).
