Packaging Newbie, trying to edit a package

Relative newbie here.

I've used the LanRev "InstallEase" utility to build a snapshot package (Acrobat Pro) that seems to work well.

What I'm trying to do now is to simply add a couple of pre-flight scripts, specifically to remove (uninstall) Acrobat Pro 7 and Acrobat Reader prior to installing Acrobat 8.

I can open the pkg format up in PackageMaker, but don't quite know where to go after that... I also have Iceberg on my system, but haven't experimented with it much.

If it is any help at all, I also created a .dmg from InstallEase, so I have the full file hierarchy if I need to re-create any of the process.

The end goal is to deploy the package via our ARD task server, so just trying to find a good seamless way to rip out the old version and install the new, but don't really know the secret to un-installing the old version.
