Maybe it's possible to get the IC**** pointers dynamically using some UPP or Mach-o stuff.

My understanding is that just loading the Carbon framework into a Cocoa application prior to 10.2 was bad. However, I'm not an expert in this area. Try the Cocoa mailing lists; I'm sure that Cocoa folks have had to deal with this before for other, non-IC functions.
