I was forced kicking and screaming to Xcode 4 for iOS 5 development but once I got used to it, I started to like it a lot. The hardest parts are finding where everything is located and getting your head around Build Schemes.
You don't need to keep multiple versions of Xcode lying around for different SDKs. Just copy the old SDKs to /Platforms/iPhoneOS.platform/Developer/SDKs inside your Xcode 3 developer folder and they'll work just fine. That's what I've done. This probably won't work for Xcode 4 though.
P.S. You can double-click a file in Xcode 4 to open it in a new window and then drag that to another screen.

I feel your pain. I don't target iOS5 either so I can still develop on XCode 3x if I target iOS4. Don't know how much longer Apple will allow that though. I really like 3.4 - just can't wrap my head around 4. And I like to use more than one monitor for development.
