Hi Dianna,
I recently had the same problem with the iPads in our BD program. There are only 9, so what I had to do because I couldn't get anything installed because of the profile, and configurator does apps first, I had to unsupervise, then get the apps I wanted on...instead of installing the restriction this time I went on manually to restrictions, created a 4 number pass code the teacher knows and stopped the ability to delete apps or install apps on those 9. I know, theoretically there are other ways to work this, but on a Friday afternoon, this was my solution. Hope this helps!

Other than manually removing the profile individually on each iPad, is there ANY way to tell Configurator to install (or remove) a profile before it automatically starts with the apps??? I'm about to take an axe to the MacBook. Configurator is evil incarnate.
