Hi, there
It seems like that is going to happen no matter what, however, someone shared this knowledge with me to avoid the update. Now, prior to this, you will need to download the iOS 7.2 Update Released [IPSW file] according with your device. You can get it from: http://osxdaily.com/2014/06/30/ios-7-1-2-update-download/
1. Open Configurator
2. Press the Option button and click on Devices (Then you will see the option Edit Custom iOS versions) click on Edit Custom iOS versions
3. In the pop up window, click on the plus button, find the .IPSW downloaded file and save the changes.
Then you can prepare or supervise the devices. For more info, visit these websites:
