There were not any major functional changes in 5.3. For the most part
it was the first steps in the new direction for WebObjects, a UI
freshening for some tired old tools. The differences between 5.2.3 and
5.3 need a few pages, not a book. Fundamentally, it is the same
environment and the same API.
There are two books that I would recommend. To get started, I'd pick

Once you have gotten going a bit further, you will probably find my
Practical WebObjects helpful (see sig for link). The publisher is
offering a good discount to WWDC attendees. Look for me at the
WebObjects sessions, I'll be handing them out. We're also doing a
raffle for some signed copies, so get your business cards to me for the
draw.
I'm probably just the kind of person Apple hopes will take up this new
opportunity. I an experienced AMP (Apache, MySQL, PHP) developer -
three years developing several small-medium sized AMP web application.
I am familiar with the three-tier (Data, Logic, Presentation) paradigm
- I use Pear templates to separate PHP and HTML. And I've done six
months of Java at uni (can't say this bit was fun). The sessions on
WebOjbects at WWDC have got me enthusiastic and fired up.
Go man, go! :-)
Perhaps now that Apple has injected new life into WebObjects a
publisher might put out an up-to-date book. A book that covers the
interface changes in the latest release would be really good. I've
submitted this suggestion to O'Reilly.
My feeling is that the interface changes are just beginning and
anything published now will quickly become outdated. Keep in mind that
what changes is less than 1% of you have to learn. All the existing
documentation is still valid for the other 99%.
If anyone has tips on getting started with WebObjects would be most
welcome (probably off-list unless you think it might benefit other
newbies)
