for those water-only guests!
Sadly, they do have the food minimum, and the food is on one bill.
There is a $20/person food minimum, so we are looking at least at
ordering two of their dishes, and so the cost per person, at this
stage, is $15 + $20 = $35. I won't have to pay anything up front, but
I'll need to cover the food, bartender, gratuity (20% + 8% tax) and
any defiency at the end of the event. All combined, its $1750 before
grat/tax. Lovely, eh?

Option #1
$125/No host bar set-up fee
$15 per person/Bar tab minimum = $750
2 tapas platters of your choice (I recommended our Albondigas (spanish
meatballs) $75 & Patatas Pimenton (crispy red potatoes w/blue
cheese aioli
on the side) $80.
= $1030 = $20.60 per person
(tax and service charge are not included on the food, estimate =
$46.81)
Or
Option #2
$125/No host bar set-up of fee (no bar minimum)
$20 per person in food = $1000
= $1125 = $22.50 per person
(tax and service charge are not included on the food, estimate =
$302.00)
Considering the majority interest is in the bear/drinks, I think the
first option is more ideal. Everybody pays for their bear, and chips
in around $6.00 for the appetizers, but those appetizers won't "scale"
that well :)
