I haven't played with this on my Mac yet.

On other UNIXes, I set it in my .zshenv file.  Since "startx" on my Linux
boxes, for instance, is always started from a normal shell, I get my
app-default every time.  That's not the case in Mac OS X, so you will have
to resort to some of the "tricks" that others have suggested on this list:
environment.plist, replacing the X11 binary with a small script, etc.
