I can only answer your first question accurately. Mac OS X + X11 is
not, as far as I know, a popular establishment for common users. Users
who -already- are using X11 applications (such as your target Linux
audience) will of course accept this. However, tools developed in Mac
OS X's X11 environment will almost certainly only apply to other X11
applications and processes.
Unfortunately, if you want to become the defacto standard on Mac you
will have to port your tools/method to Apple's Cocoa library. This is
probably a huge departure from programming you've done before. I
recommend you take a look at the currently available tools from Apple
for Chinese input. Especially the new "International" menu and
preferences in Panther (10.3).

Apple computers are supplied with Mac OS X. It runs Darwin as it's
"Unix base."
Darwin is a variant of BSD and uses Mach as well.
Programs written for Linux can and have been ported. Everything from
X11 to Open Office to emacs and Ethereal can and have been running on
Mac OS X for a while. Take a look at the Fink project at
